You have to type it in the callsign field and it will override the recent callsigns field with the drop-down menu. Then if the callsign is not taken yet, you'll get connected. Or are you trying to change it by filing a flight plan? That's not gonna work. You have to disconnect first and reconnect with the new callsign.
