ATC seems to be responding. They are online according to vPilot. I am on ground at Amsterdam Schipol and tuned to 121.800. Any assistance would be marvellous on next steps to ensure I am away on time

Note that Tower is currently online. Would it be best to tune to that?

In the current situation you'd call DEL (121.65) first. They will tell you when to go to the next frequency (GND - TWR - ...).

VATSIM uses a topdown system which means that the controllers control all positions that would fall vertically under them in the real world.

From top to bottom: CTR - APP - TWR - GND - DEL, have a look at this site for more information: ATC on VATSIM (dottycomma.com)

Lastly, since you seem to be new, make sure to conduct your first flights at quiet places. You will be more relaxed and controllers will be able to help you out much more easily in case you'd need help.

Would it be best to do a flight like JER-MAN as its a quieter route, as is Jersey and Manchester airports.

Depends on your proficiency. How familiar are you with your aircraft and with ATC comms? There's no ATC on that route currently, so if that's something you're looking for it might not be your pick.

At this moment in time, I'd avoid EGKK, EHAM, EBBR, EDDF, LOWW and LEMD. All other airports should be fine given current ATC staffing and the bussy-ness of said airports.

You can check who's online using tools like VATSPY or sites like https://simaware.ca/

Be sure to have a thorough look at the new member orientation course too. Part three explains the topdown system and gives more alternatives for seeing who's online:  https://my.vatsim.net/learn/new-member-orientation-course/
