The 560 has faster GDDR5 memory so you should get a fair bit more performance out of it. Anyways I wouldn't go any lower than the 560. I came across a decent wad of cash and wanted to treat myself before being responsible with it. So I dropped ~$1400 on a rig that I hope serves me well. Just so you know on the i7's especially at highers speeds the better GPUs do tend to differentiate themselves more.
