I'm [Mod - Happy Thoughts]uming that Euroscope retrieves its metar/weather information from VATSIM, who retrieves its weather from a number of weather sources (most notably, the NOAA).

Is there a way to change where Euroscope gets its weather from? For example, would someone be able to retrieve their metar and weather directly from a weather source, such as the NOAA? It would eliminate the middle man.

No there isn't. You will have to use the VATSIM weather as a guidance. Which is at least 95% of time, correct to what it is in real METAR.
